Saffron is one of the most loved ingredients in Gulf kitchens — it gives rice its golden colour, karak its warm aroma and Arabic coffee its special touch. Because good saffron is strong, you only need a little. Here is how to get the most from every thread.
Step 1: Always soak saffron first
Do not throw dry threads straight into the pot. Instead:
- Lightly crush the threads between your fingers.
- Soak them in 2–3 tablespoons of warm (not boiling) water or milk.
- Leave for 10–15 minutes until the liquid turns a deep golden colour.
- Add the liquid and the threads to your dish.
How much saffron to use
These are kitchen guidelines — adjust to your taste:
| Dish | Suggested amount |
|---|---|
| Machboos or biryani (family pot) | A generous pinch, soaked, drizzled over the rice before the final steaming |
| Karak (a pot for the family) | A few threads added while the tea simmers |
| Arabic coffee (a dallah) | A few threads, added with the cardamom |
| Desserts (luqaimat syrup, custards, rice pudding) | A small pinch soaked in warm milk |
Saffron in machboos and biryani
Cook the rice as usual. Before the last steaming, drizzle the saffron liquid over the top of the rice in a few places. When you mix gently at the end, you get the beautiful mix of golden and white grains with a lovely aroma.
Saffron in karak and Arabic coffee
For karak, add the threads to the pot together with the tea and spices so the colour and aroma open slowly. For Arabic coffee, add a few threads with the cardamom just before serving — many families also put one or two threads in the dallah for guests.
How to store saffron
Keep saffron in an airtight container in a cool, dark and dry place. Light and moisture are its enemies — kept well, your saffron keeps its colour and aroma much longer.
