Qatar's summers are long and hot, and many people wonder whether honey needs the fridge. The good news: honey is one of the easiest foods to store — as long as you follow a few simple rules.
Honey: keep it closed, dry and out of the sun
- Room temperature is right. Keep honey in a kitchen cupboard, not in the fridge. Cold makes many honeys thicker and can speed up crystallisation.
- Away from sunlight and heat. Do not keep honey on a sunny windowsill, next to the stove, or in the car — a parked car in Qatar gets extremely hot.
- Lid always closed. Honey absorbs moisture and smells from the air.
- Always use a dry spoon. Water or crumbs in the jar can spoil the honey.
Our Sidr honey does not crystallise when kept this way — it stays smooth until the last spoon. Other natural honeys, such as Spring Flower honey, may crystallise over time; that is normal. Warm the closed jar in warm (not hot) water and stir to make it smooth again. Never microwave honey.
Honeycomb: covered, at room temperature
Keep honeycomb covered at room temperature, away from sunlight and moisture. There is no need to refrigerate. Use a clean, dry knife each time and place the comb on a plate with a rim, because honey flows out of cut cells.
Saffron: airtight, dark and dry
Light, air and moisture take away saffron's colour and aroma. Keep saffron in an airtight container in a cool, dark, dry cupboard — away from the stove and the spice rack above it.
Chocolate dates: the fridge helps in summer
Chocolate can soften in the heat. Keep chocolate-coated dates in a cool, dry place, and in hot weather keep them in the fridge. Take them out a few minutes before serving.

Frequently asked questions
Should I put honey in the fridge in summer?
No. Keep it at room temperature in a closed jar, away from sunlight. The fridge is not needed.
My honey turned solid. Is it spoiled?
No. Many natural honeys crystallise over time. Warm the closed jar in warm water and stir.
Can I leave honey in the car?
It is best not to. Cars in Qatar get very hot, and strong heat can change the taste and colour of honey.
