Why Does Honey Crystallize? Is Crystallized Honey Still Good?

Short answer: crystallization is a natural process, not a sign that honey has gone bad or is fake. Honey is a very concentrated sugar solution, and over time some of its natural sugar (glucose) separates into tiny crystals. The honey is still safe and good to eat, and you can make it smooth again with gentle warmth.

What is happening inside the jar?

Honey contains more sugar than water can normally hold in liquid form. The two main sugars are fructose and glucose. Fructose stays liquid easily; glucose does not. When glucose slowly comes out of the solution, it forms crystals, and the honey becomes cloudy, thick or completely solid.

Why some honeys crystallize fast and others stay liquid

  • The flower source. Every honey has its own balance of sugars. Honeys with more glucose – for example mustard, clover or many wildflower honeys – tend to crystallize sooner. Honeys with more fructose – such as acacia – can stay liquid for a long time.
  • Temperature. Cool temperatures (around 10–15 °C, like a fridge door or a cold storeroom) speed up crystallization. Warm room temperature slows it down.
  • Tiny particles. Natural pollen and wax particles give crystals a place to start forming. That is one reason raw, lightly filtered honey often crystallizes sooner than heavily processed honey.

Does crystallized honey mean it is fake?

No. This is one of the most common myths. Real honey can crystallize, and some honeys almost always do. At the same time, staying liquid does not prove a honey is fake either – it depends on the honey type. You cannot judge purity from crystallization alone; read why home tests fail for what actually works.

How to make crystallized honey smooth again

  1. Keep the lid closed and place the jar in a bowl of warm water (comfortable to touch, not boiling).
  2. Leave it for 15–30 minutes, stirring now and then with a dry spoon.
  3. Repeat if needed. Large jars take longer – you can warm only the amount you need in a small bowl.

Avoid: the microwave and boiling water. Strong heat can change the colour, taste and aroma of honey. Plastic containers should not be heated – move the honey to a glass jar first.

How to slow crystallization

  • Store honey at room temperature, not in the fridge.
  • Keep the lid tightly closed.
  • Always use a clean, dry spoon.
  • Keep it out of direct sunlight and away from the stove.

Some people prefer it crystallized

Crystallized honey spreads on toast without dripping and has a pleasant creamy texture. "Creamed honey" sold in many countries is simply honey that was crystallized in a controlled way so the crystals are very fine.

Honey type Tendency to crystallize
Mustard Fast – often within weeks
Clover Medium to fast
Eucalyptus Medium
Sidr (ours) Does not crystallize – stays smooth
Acacia Very slow

Times are general guides; the same honey type can behave differently from season to season.

Honey is not suitable for infants under 12 months.

Frequently asked questions

Is crystallized honey safe to eat?

Yes. Crystallization changes only the texture. If the honey smells normal and has no foam or sour smell, it is fine to eat as it is or after gently warming.

Why is there a liquid layer on top of my crystallized honey?

When glucose crystallizes, the remaining part becomes slightly more watery and can rise to the top. Stir it back in. Keep the jar tightly closed so it does not absorb moisture.

Can I stop honey from ever crystallizing?

Not completely for every type, but room-temperature storage and a closed jar slow it down a lot. Choosing a type that stays liquid – such as our Sidr honey, which does not crystallize, or acacia – also helps.
